Baked Eggs in Avocado

If you are looking for a quick, easy, and healthy meal for a breakfast or a quick lunch you have to try this one.

Ingredients:

2 small eggs
1 avocado, halved and pitted
2 slices cooked bacon, crumbled
2 teaspoons chopped fresh chives, or to taste
1 pinch dried parsley, or to taste
1 pinch sea salt and ground black pepper to taste

Method

Preheat your oven to 425 F.
Crack the eggs into a bowl, being careful to keep the yolks intact.
Place the avocado halves in a baking dish. Gently spoon 1 egg yolk into the avocado hole. Then spoon the egg white into the hole until full. Season the filled avocado with parsley, chives, pepper and sea salt.
Place the baking dish in the preheated oven and bake for about 15 minutes or until eggs are cooked. Sprinkle the bacon over avocado before serving.
